One of our top priorities is to use local food, products and services whenever possible.  Here we want to give credit to our amazing farmers and artisans who put their lives into their products so that we can have the best food there is.

Using ingredients found locally is not only better for the earth but it’s great for our local economy.  When you buy food from us, the majority of YOUR money stays right here around Nebraska.  That just makes good business sense.

TD Niche Pork | Elk Creek, NE

TD Niche Pork is located 65 miles southeast of Lincoln in Johnson County, Nebraska.  It is independently owned & managed by Travis Dunekacke.  Travis is proud to supply fresh Berkshire pork to GUP year round.  Purebred Berkshire is well known for it’s improved flavor, marbling, & juiciness compared to standard commodity products.  Unlike most cuts today, this pork is not “pumped” with a salt-water solution to improve palatability.

The hogs are raised in an outdoor, fresh air environment without the use of antibiotics. They’re fed locally produced grains without any synthetic growth promotants, digestive aids, or distillers grains added.  Only ground corn, soybean meal, vitamins & minerals appropriate for the pigs age & weight.  They are processed at Den’s Country Meats USDA inspected facility in Table Rock, Nebraska.  The final cutting & curing steps are provided by GUP staff.

La Quercia | Norwalk, IA

Herb and Kathy Eckhouse founded La Quercia and work in all aspects of the business–selecting and buying pork, salting, trimming, and handling hams and leading the small group of dedicated staff who participate in our production.

They started La Quercia to create premium quality American prosciutto, then applied what they learned to other cuts of pork. Their appreciation for cured meats grew out of the three and a half years they lived in Parma, Italy, prosciutto’s area of origin, where they saw how the careful treatment of fine materials resulted in an accessible, sublime and entirely regional cuisine. Their ambition to create their own prosciutto came from the desire to take the bounty that surrounds Iowa to its highest expression. They seek to contribute to the growth of premium artisan-made American foods by offering unique dry cured meats of the finest quality.

Le Quartier | Lincoln, NE

After learning the trade in Montreal and Paris, John Quiring came back to Lincoln, Nebraska to start Le Quartier Baking Company in March 2006. The business began slowly by selling to local restaurants but soon grew with the start of the summer farmers markets and a few local grocery stores. Joined by John’s brother Seth, Le Quartier opened its first retail storefront in late December 2006. In February 2008, Le Quartier opened it’s second retail location to better serve the Lincoln area and increase production space in order to produce cakes and more deli items.
